To those of you who know far more about suspension etc than I do, My back end is once again riding a bit lower than Id like so what would be the easiest way to add an inch or two?

Get some spring supports from autozone or some other auto store.

You could always put airbags in the rear

I had a local shop make me 1.5' rubber cup spacers to raise the overall ride height of my car. Don't you have a shop that does that there?
FYI when I installed Tanabe NF210 springs sourced from a local JDM parts supplier, it said that the lowering would be mild, like 1.2' all around. Apparently, this was based on oem Yaris JDM spring height. When I installed it on my car, it got lower by almost 2.5 inches when I really just wanted 1' or so so I had rubber spring cup spacers made. Raised the overall ride height all around, got stiffer springs and still have lots of suspension travel :)
