I'm looking for a [cheap] alternator for my 2007 Yaris LB. Mine is working just fine, but I destroyed the allen bolt at the top of the axle trying to loosen the nut holding the pulley...

The Allen key hole isn't any kind of bolt. The pulley is held on by the nut on the shaft. Nobody I know uses the Allen hole for anything - just use an impact wrench to remove or replace the pulley.

So, even with an impact wrench, how are you going to keep the alternator from simply spinning?Inertia, my friend. Unless the nut is rusted on very firmly, the impact wrench will take it off. Just wait til the spinning stops before you hit it again. You can also take the alternator apart and put the rotor in a vise.

I wrote it all wrong, there is no allen hole, the axle itself ends in a 10 mm bolt... which is now nice and round after I tried to loosen the nut...

Looking at the alternator on my 2008 5-door, I see what you mean - the rotor shaft ends in a hex that you can fit a wrench to. However, the whole assembly is still held together by a nut. You can still remove the nut with an impact wrench. Too bad about the hex, but it really isn't necessary.
