Is there any gain if I take the ac pump and power steering pump off
Of course! Any reduction in rotating mass for anything being driven by the crank (this includes everything from the crank pulley all the way through the drivetrain to your wheels) means more energy is available to put to the ground :)
Edit: there is no power steering pump in a Yaris, it's electrically assisted :P

Not enough to justify losing the AC.

Just get a smaller belt, and bypass the a/c when out tracking it.
I posted a thread on this somewhere a couple years ago, lol, that has the size to go buy from Autozone :)

There is no power steering pump. The Yaris has electronically-assisted power steering.
If you take out the a/c system completely, you save 16 pounds and lose one pulley. It's a clutch pulley though, so there isn't THAT much drag on it when your a/c is off. But I did it. Water pump too.
