Is it possible with the 60/40 split rear seat to remove the bigger(60) part? and just leave the smaller part?

No problem. The hard part is to figure out where to store the seat you took out. Mine has been sitting in the corner of the garage almost 4 years.

I think the bolts can get corroded from below, making the threads all but impossible to back out. There's a thread around here somewhere, or on microimage about a similar problem...

why?

they are a total pain in the ass to remove. Think worse bolts in history and you are on the right path.

Soak the crap out of them, do every trick you know to remove a stuck/corroded bolt first, because it is really easy to strip them completely.

Or take out the 60 and leave the 40... more versatile! (IMHO)
