Sorry to ask such a general question...have an opportunity to get a set of kosei 15x7 30 offset wheels for cheap and swap over my 205/50 tires my car is basically slammed will this rub in the rear?

im sure you'll be fine. many people get +40offset with 10mm penguin spacers without issue. I had an effective +27 offset 16x7 on 195/50/16 tires with tuck and had no issues at all...even with our crooked rear axle beam.
That is super subtle not aggressive at all. You should be fine
Any updated pics since you've gone lower?

using 150mm megan rear spring chppped rear shock bolt by a good 1.5 inches..The trick to lowering these more was to reuse the oem upper spring seat and lose the spring perches

After:
Diched the rear spring perches, reused oem upper top hat lowered it by an extra 1inch, once this settles it will be highly tucked, though I am dissapointed with the free travel of the megan yaris shock..I am looking into the Function and Form or D2 offering for the 07 Honda Fit as they are shorter by a good 20mm than the yaris

Running 2 sets of oem toyota camber bolts in the front (2 camber bolts per wheel) I would conservitively put this at -3..no more fender liner issues..May slot the strut holes if I ever man up and get the TR Motorsport 15x9 36+ offset wheels

A trip down memory lane....my old ep3 running -5 camber with buddy club coilovers, J'sRacing DC5 tie rod ends, full hfp kit with 03 tailight swap, k20a swap..A top knotch car with top knotch memories

I miss my ep3 but the vitz is growing on me just wish you could use camber plates and lose the crap torsion beam

Mugen wing, with stock 04 tailights..1 month after I got her on Progress Coilovers, a good coilover sadly no camber plates

my old 07 yaris with Type S front lip, on tein basics, not a good coilover imo, these are maxed and still not low and too softly valved/sprung
Nice cars lol I still use my 130mm rears springs with the shocks set longer and no issues

No rubbing issues. Could still go a little lower also. I did pull and roll my fenders far enough to clear 225/45/15 tires on the same wheels.

Lol I know you run your springs like that 1.5 but I am unsettled about it for some reason..

Am i correct in gathering that 205/50/15s wont be a problem for a car that is lowered 1.8 inches?
and is there a preferred offset range to use?
