I converted a bench seat Yaris to a 60/40 and had to weld in some missing mounting points. I believe that you would have to do something similar as with moving the 40 part to the center the mounting holes would likely not line up. Here's my thread with pics of what was involved:

Issue of requiring new mounting points aside, how would you address the seat belt?

Not sure how safe that would be either

Hey I wouldn't be back there so what the heck lol was just testing the waters seen if any one has done this or something close... Racing harness is only thing I could think of. For a seat belt. I have never sat in the back of my car, what does the center seat use as a stock seat belt?

haha ^ just make sure you have a pre-boarding disclosure...

"all passengers enter at their own risk and all liability is assumed by back seat inhabitant."

The center rear seatbelt uses the ceiling mounted shoulder belt and the receiver for it mounts to the bottom of the seat frame for the 60/40, so you could easily keep the seatbelt.
