Idk about yaris specific, but Cars and Coffee at Classic BMW in Plano is always fun to go to. First Saturday of every month

There are Cars and Coffee meet-ups in San Antonio as well.

As for purely Yaris meet-ups, we had a couple of them back in SA many years ago (2010, actually; the threads should still be in the Southwest section), but the enthusiasm for them tapered off quickly. I think the best was when we had six Yaris liftbacks at Freebird's Burrito on 25 April.
