I just got a trailer hitch for my Yaris. but now I'm wondering how much weight can it carry/tow.
I'm planning on doing more traveling with potentially more people. So... about how much it can hold may alter how many people I take.

I've towed a 350lb trailer with a 200lb moped on it with me and one other passenger and it handles it but you could tell it was struggling up hills. Trailers are fine for short in-town trips but you have to be mindful of what limitations you can tow. Also tongue weight for my hitch is limited to 200lbs I believe.

In denmark/europe my 1,3 must tow 550kg without brakes on the trailer and 900kg with brakes on the trailer.
A diesel must tow 1050kg with brakes on the trailer.
You should have a weight sticker in the driver door frame where you can see the weights on the car where the biggest number is max allowed weight for car+trailer.

Those stickers are not required on North American vehicles, so we don't have them unfortunately.
Note that Toyota does not recommend towing with the Yaris on US-spec models, while they do list information for Canadian models. This is no difference between the cars, so it is likely a regulatory thing.
Towing capacity (Canada):
318 kg (700 lb.)
Towing capacity means the maximum gross trailer
weight (trailer weight plus its cargo weight) that
your vehicle is able to tow.
There is a lot of other information about how much weight the car can carry with and without a trailer and how to load it properly. I would recommend reading through those sections.
