I have a 2007 Yaris 4 door got it stuck in the mud a week or so ago and now the AC went out. Well the engine revving in gear shifting to try to get it unstuck may have helped? It served me well for 12 years why now?

Why now? It sounds like you may have answered your own question. You rocked the car back and forth, probably damaging an A/C hose or fitting - and hopefully nothing else. Or, it had nothing to do with your treatment of it and it just failed due to age. There is no way to diagnose this without seeing it, so if you want A/C, then take it to a shop, get it properly diagnosed and repaired.

well I recharged it and leak sealed it and it's working fine now, had my doubts for a minute!

Great! 12 years is pretty good service especially if it's not been touched since new. Compared to other cars I've owned, the Toyotas seem to have a pretty durable a/c system.
