Probably taking a drive down to extreme Southern Texas on the Rio Grande Boca Chica Beach near the Space X launch facilities
After that I'm interested in any ideas about great routes back to San Jose 4 nights max and the more rural the better
Gas is stupid cheap and basically free outside Ca ... time to get the freak outta here !
My general route but very open to suggestions

I don't know what routes you've done in the past, but how about north of Vegas toward Tonopah, Mizpah, Goldfield, the Extraterrestrial Highway, etc.? I'd like to drive those routes someday.

We were going to visit Carlsbad Caverns/Guadelupe Mountains area for the first time this Spring, but Covid happened and we'll have to do it next year. You won't be too far for if you skip El Paso and keep heading East, then South back to your original route.
As for the way back, it looks pretty 'rural' once you get out of Texas. I understand not wanting to go much further East to make it back to San Jose in 4 days and still getting to see unexplored areas.
I come from the Midwest so MY dream route back would be back to El Paso, then North thru the mountains up to Wyoming or Montana. Being from California, however, I can see the draw of the open prairie and grasslands.
