Does anyone know how to go about replacing the bolt that holds the alternator bracket to the engine. Belt started squealing like mad, I found this to be the culprit. I'm not sure how to remove it to fix it. Thank you for any help you all can provide.

It's kind of a stud with a bolt head in the middle, what's left should come out with a 12 mm socket. It's holding that corner of the timing cover down so I wouldn't recommend removing it until you've got the new part.
The alternator bracket retaining nut has indeed sheared off and taken most of the threaded stud with it. It's an inexpensive part but has to be ordered from the dealership:

Bolt no.5 in the bottom diagram, PN 90109-08283
The nut is on a different diagram (click "more pictures" and look at the second one)

I had a similar situation. I can share my experience. I used a bolt of strength class 8.8 with a full thread, but it is better to use a bolt of strength class 10.9. We lift the engine, remove the old bracket, and unscrew two bolts, M8x65 mm, with which the support bracket is attached to the engine block. As expected, I didn't have any trouble with the lower axial bolt. I got it behind the support and knocked it out. Before starting the process, I bought bolts of different lengths and diameters in Scrooz Fasteners (https://www.scrooz.com.au/). Unfortunately, you are unlikely to find information about the bolt size, so I advise you to buy several in advance and try on each one.
