I'm currently running Kumho Ecsta 4X Ultra High Performance (205/50/16). Excellent handling and very good straight line stability with no highway wander. Quiet, comfortable ride. Great for driving hard around town and very good highway manners.

Previously, I ran:

Zeetex HP102+ Ultra High Performance (205/50/16). Very good handling. Excellent straight line stability with no highway wander whatsoever. Super quiet, comfortable ride. The best tyres I've ever driven at highway speeds.

Nitto NT NeoGen Ultra High Performance (205/5016). Outstanding handling! Terrible straight line stability at highway speeds and ridiculous highway wander! Noisy, snow-tyre like ride. Great tyres to throw the car around corners, but stay off the highway.

Get a rear sway bar and some bad a** tires and hoon the crap out of it. Best case scenario is run summer and winter tires so you can get grip in the right ambient temperature/road condition

I live in Texas as well and know the struggle of interstate driving. I lowered mine about two inches and went to a 195-60 tire and both of those made a huge difference.
