To top up just about anything will do as long as it says compatible with all types on the bottle some where. The Toyota red or pink stuff is good for a very long time in my experience.

Stick with Toyota pink I wouldn't advise mixing coolants. There is a company called "OEM" that is sold out here in Canada that makes coolant for all brands and their Toyota/Lexus stuff is has the exact same ingredients as the factory Toyota stuff according to the MSDS sheet.

If it's only slightly low just top it up with distilled water.

This. I believe it's the water that evaporates anyways.

If it happens only once you can just use distilled water.
If you are flushing complete system then give it whatever there was before.
If it was pink, let it be pink.
While original Toyota is obviously the best, you can use virtually any pink coolant available.

If its just a tiny bit, I just use regular water or better distilled water.
