Newbie Question on Acceleration

Hi all,

I bought a Yaris 2009 last year. When I push the accelerate pedal, I can see the rpm dashboard fall after reaching the first time of 2000 rpm. Is it changing shift? It will fall again in the second time reaching 2000 rpms. However, if I accelerate like that, waiting it to fall two times at 2000 rpms, I often accelerate much slower than the other. Does it hurt if I accelerate with 3000 rpms at beginning?
I am figuring the way to max my accelerate speed without hurting my car...
What's your rpms when you are driving at 70 mph?
