I lied.... I planned on making mexican... but the GF had already gotten soup & biscuits. The enchiladas will be tonight instead.

Back in college when I was broke... I'd eat...
1: Rice +butter+sugar
2: Baked Potatoes (microwaved tho) + a can of chili
3: Plain Oatmeal + Maple & brown sugar Malt O Meal

Fried Ramen is a good one too. 2-3packets of oriental flavored top ramen, 2-3eggs, onions & cheese. Cook the noodles for like 1 min to start to get them soft, drain water, throw in frying pan, add the seasoning, eggs, cheese, onions.... fry ... then serve.

Onions are cheap, ramen is cheap, eggs are cheapish... cheese is the only spendy part (but buy Cheddar in 5lb blocks and it's not too bad)
