Ground off the positioning pins on the HU mounting brackets. Was then able to position HU further back.

So the new trim piece doesn't rest on the face frame of your head unit? If not, don't you see a gap / empty space around the face frame of your head unit (between the face frame and the trim piece)? |

When the trim reaches the point where it snaps into place, the back side of the opening just meets up with the 'flange' on the face frame.

So after grinding the pins off and mounting the HU further back, does any part of the HU even touch the new 180mm DD trim piece?

You should look for the authentic Toyota branded single din pocket w/ door. I've found some on eBay before. I think they came out of old Camrys.
