Silly Question
When you are doing a Dyno on a car that has a CAI aren’t you down playing the overall performance?
The faster you go the more air gets to the Intake... yada yada yada... But when it's sitting still on those rollers there is no extra air flow, right? Or do most places have a giant fan that spins in conjunction to the Speedo, so that it would better simulate real world conditions? I don’t even know if any of this makes sense… But hell I warned you it was going to be a silly question!

hmmm if you have a ram air intake, where the rushing air is force fed into the intake, yes, it could cause a difference. For more normal intakes, they are shielded from incoming air, so it's not a big factors. Most dyno places I have seen do keep fans blowing at the cars, mainly to prevent them from overheating!

I hae seen lots of pictures and videos of people doing Dynos with huge fans in front to simulate the air coming in. But you brought up a very good point, never would have thought of that.
