sounds as though you didn't let it age long enough before you bottled the IPA, did you use a secondary fermentor? take any SG readings? did you do a full 5 gal boil? if not then that might the cause for it to not be as hoppy as you had planned.

same here, apple juice was on sale, $15 for 5 gallons, so I figured I might as well try it, I used a different type of yeast than edwort recommends, but I think it will be pretty similar (I used a champagne yeast instead of red wine)

I saw a few others that modified the type of yeast and it looked like champagne yeast worked the best for most

I've made some apple wine before with a champagne yeast and it turned out alright, my only fear is that it won't bottle carbonate the way I want it to, but only time will tell, I figure the entire batch cost around $20 so even if it isn't great I'll just chalk it up to learning more about yeast
