If you pull the 7.5A one in the under the bottom of the dash panel, you will kill the AC ECU, but that will also prevent the rear window defogger and PTC heater from working.

The fuses under the hood are for the blower motor and the PTC heater.

So, to kill the AC for the winter and still have everything else work you would either have pull the connector from the compressor (and somehow seal both ends from the weather) or disconnect the green wire in pin 7 of the 16 pin connector on the AC ECU. That pin is the output to the AC compressor clutch.
