Most coil's won't go to stock height, but some will only lower it an inch or two. The Yaris sits so high an inch or two is not that big a deal unless you need to go off road a lot.

The real difference is in the ride. Some shocks like the Tokico Reds are adjustable, and can ride really softly, and so can some coilovers. Others are rather harsh.
