There are Cars and Coffee meet-ups in San Antonio as well.
As for purely Yaris meet-ups, we had a couple of them back in SA many years ago (2010, actually; the threads should still be in the Southwest section), but the enthusiasm for them tapered off quickly. I think the best was when we had six Yaris liftbacks at Freebird's Burrito on 25 April. Unfortunately, all the pics posted were hosted by Photobucket, which has since stopped its free service...
