Unhappy is it a throttle issue or coolant?

problem: warm up car for 5 minutes, dash still shows "cool" display. i drive it and from 0-10, the gas pedal has sluggish response, almost like the fuel injector is dirty, but once it's warmed up, problem is gone, i also thought it might have been the oil i used since once warmed up - problem is gone. so upgraded to Mobil 1 Extended Performance 5W-30 synthetic but same issue. just prior to changing oil to synthetic, i added coolant and went over the max - could going over the max cause this or maybe the type of coolant i used, coolant is pinkish, orange-ish color and definitely not green or blue.

now i'm lost, if i just need to take my coolant down below max or if i have a throttle issue.

again, it responds but when i gas - sometimes the rpm goes down and i try again until the car actually moves. this only happens in the 1st 15 minutes after starting car, once engine is warm - no issues
