EphPod is a great program to use to get files from your ipod. I used this program before, and it's very simple to just drag and drop music files from your ipod onto your desktop. Whaddya know, first result is google: http://www.engadget.com/2004/11/02/h...off-your-ipod/

winamp

I see nobody mentioned Winamp as an alternative. You can transfer music both on and off using it.Also movies.Dont know for pictures as I havent tried.
And it will not erase music transfered previously by Itunes.
Only bad is sometimes it crashes. So I figure out when transfering music dont touch Winamp untill transfer is 100%. If you do touch it it will crash.

Side note, Vista doesn't seem to like that "ipod control" folder, so use XP.

this looks like it has been answered and everything, but since it got bumped I'll just mention that I used the senuti program when I got a new laptop and my old laptop was completely fried, no way of getting anything off that.

It took the music from my iPod, but it on my new computer and everything works great.

There's another way to transfer songs which is pretty easy; create an alternate library by holding "ALT" while starting iTunes. Make sure the library is empty and then sync your old iPod to that library. Then all you do is sync that library onto the new iPod.

When I had an iPod (took it back; too expensive for what it was) I did something similar to this... it erased my iPod when it synced my empty library with my full iPod

(oh and I just stumbled upon this method to get music off your iPod. StumbleUpon FTW! )
