g'day, I don't know much about rims sizes but am looking at buying some alloys for my mum's Yaris for Christmas, found a good looking set for cheap, hoping for the ride to feel a bit more stable than the current bicycle wheel stocks on there at the moment. Would these handle well without compromise as it's only a small change from stock?

Those wheels are the wrong stud pattern. Yaris wheels are 4x100.
Check the tyre placard for the standard wheel and tyre sizes. The NSW government specifies that you must not fit wheels more than 26mm wider than the originals, and must not increase the vehicle's track width by more than 25 mm. They also specify that "speedometer accuracy must be maintained". It's also a good idea to check with the insurance company first to see what they are okay with.
