Disconnecting battery for long car storage

Are there any problems associated with disconnecting and reconnecting the 12V battery on my Yaris Hybrid (2020)?

No need to address the high voltage battery. Just how long do you envision a "few" weeks to be? In my part of the world, when a car goes into winter storage, it is there for 6 months. Significantly longer than a few weeks.

most if not all "HV" batteries are Lipo, and are best to have been charged and then used just a little before long term storage IE run them just enough to take the full charge off

as far as disconnected..ive got no idea...coming from the high end hobby RC car world my brain screams yes disconnect em

I would look in your owners manual and if you don’t find any reasonable answer, call Toyota service. They would know. I suspect you don’t have to do anything. Maybe charge the 12 battery Or just check it’s charged
