Depends. Sure, larger sidewall ratio = more flex, but stiffer tire in the first place = less flex so it can all balance out.
As I said, 195/50-15 is tempting for summer tires for just that reason, THAT is a sweet spot for summer-tires, 195/60-15 is a sweet-spot for top-end all-seasons.
