A normally functioning A/C unit will pull the moisture out of the air, that's why it's useful even in the winter to defog your windshield. I'd check the A/C is actually working, and see if the A/C drain is not clogged.

As for the brakes if you warped a new set of rotors I would suspect the caliper slider pins are seized or a seized caliper piston. You can easily check the slider pins and re-grease them with synthetic brake grease. A seized piston generally means a new brake caliper.
