Mr. Siray, you interrogate peepo?
I just had pizza. That sounds ordinary, but it wasn't. There's this place called Di Fara's Pizza in Brooklyn. Walk up and see a faded green and red sign, a dripping, rusted air conditioner above the open doorway, and smoky windows with pots of herbs behind them. The inside is small and cramped with people. Three fans spin from the ceiling, but to no avail... the room is filled with smoke that spills out from the oven. Behind the counter is an old man, white hair, white face, all covered in white flour, with spatters of red sauce on his apron. He moves methodically, slowly. He doesn't let anyone else touch the pizza. He pulls the herbs off the stems from the windows and sprinkles them. He pinches pizzas while still in the oven to see if they're ready. The twenty or so people wait and bathe in smoke, smoke from the oil he pours under the crusts of the baking pizza. After 45 minutes, I finally get my order. I still couldn't find a place to sit. So I went back out to the car, lifted the hatch, and sat in my mobile eatery and ate an extraordinary slice of pizza... with my gf. |
